Dan Dan Dumplings

Dan dan dumpling time! Our latest recipe features mushroom dumplings made with Chinese Laundry's dan dan sauce.

Chinese Laundry was founded by designer Yanza and chef Leo, a husband-and-wife team in California, as a way to preserve and share Yanza's family recipes from China.

Their spicy and nutty dan dan sauce adds some extra oomph to these dumplings. Check out the recipe:

Ingredients (makes 18)

  • 6 dried Chinese mushrooms, soaked overnight in plenty of water, strained and finely chopped
  • 1 carrot, peeled and finely chopped
  • 2 cabbage leaves, finely chopped
  • 2 tsp neutral oil
  • 1” stem fresh ginger, peeled and minced
  • 3 Tbsp Chinese Laundry Dan Dan Sauce, plus more for serving
  • 1 tsp salt
  • Dumpling wrappers
  • Scallions and cilantro to serve


  1. Add oil to a hot wok, stir-fry the ginger for 1 minute.
  2. Add the chopped vegetables and stir-fry for 2 to 3 minutes until the carrot has softened.
  3. Mix in the Chinese Laundry Dan Dan sauce and season with salt.
  4. Set aside to cool completely.
  5. Wrap the dumplings and steam for 8 minutes.
  6. Serve hot!
