Brown Butter Bessou Furikake Chex Mix

  • 7 cups Corn Chex cereal
  • 4 cups popped popcorn
  • 2 cups baked green pea snacks
  • 1 cup mini rice crackers
  • 1 cup unsalted peanuts
  • ½ cup unsalted butter
  • ½ cup maple syrup
  • 2 tsp soy sauce
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ cup Bessou furikake


  1. Preheat the oven to 250°F.
  2. In a large bowl, toss the chex, popcorn, snacks and peanuts together. 
  3. Melt the butter in a small saucepan over medium-high heat until it starts to brown slightly. Turn down the heat to medium and stir in the syrup, soy sauce, vanilla, and salt.
  4. Gradually drizzle the butter mixture into the snack mix in increments, stirring well to evenly coat the snacks. Toss in the Bessou furikake. 
  5. Spread in a thin layer on 2 or 3 large baking sheets and bake for 1 hour, tossing the mixture every 20 minutes, and swapping the racks for even toasting. 
  6. Let cool completely before storing it in an airtight container.
