Chef Augelyn Francisco with a dish of halo halo

Kabisera: Halo-Halo

We spent the summer cooling off with halo-halo from popular Filipino eatery, Kabisera, and chef and owner Augelyn Francisco.

The unofficial national dessert of the Philippines, halo-halo (which translates as "mix mix" from Tagalog) is made with shaved ice, coconut milk, and various toppings such as kidney beans, coconut strips, cubed taro, and pieces of fruit, and topped with ube ice cream.
